One might not believe this but I dreamt of this dish. I did not remember how and why _. But anyway here is what the final outcome looked like.

RECIPE:
Take a pork chop (boneless) beat it flat. Some boiled and ground spinach, finely chopped leaks. Lay it flat on the pork chop and add in a few strips of mozzarella cheese a little swish cheese. Roll it and place it on a baking pan lightly sprayed with butter so that it will not stick to the pan. Drizzle a little bit of bread crumbs and cay-ane pepper. Preheat oven to 450’ and then bake for 20 mins. Make sure that it is cooked. Since I dreamt of this I am not sure how long does one put it in to have it cooked. I did 20 and it was okay.
Dice cucumbers and lay it on the plate so that it forms a shape, since it was hard to have a round shape I went with a triangular shape and layered thin strips of cucumbers on the top in order to place the baked good. Slice a few pieces of citrus fruit for decoration as shown. And a few leaves of coriander for decoration on the top. The final thing is the sauce which was a hollandaise sauce. I originally wanted a red wine vinegarette sauce but no wine at home. Had to settle for another type.
For the hollandaise sauce :
* 1/2 cup butter
* 3 large egg yolks
* 1 tablespoon plus 1 teaspoon of lemon juice
* 1/8 teaspoon salt
* dash cayenne pepper or hot pepper sauce
* 2 tablespoons hot water
* finely chopped fresh parsley, if desired
Heat butter in a heavy saucepan until hot and foamy, but not browned. In a small bowl, whisk or beat egg yolks with lemon juice, salt, and cayenne pepper or hot sauce. Gradually beat in butter, then water. Return mixture to saucepan and beat over very low heat until mixture is slightly thickened. Serve immediately or let stand over warm water for up to 30 minutes.
This recipe for the hollandaise sauce is all over the net.
And finally arranged as shown in the picture.

Great place to go for a bike ride. You can rent a bike there and take in the view. Its a place you cannot miss right next to the town of Gaylordsville, CT. Few shots.
