Sea Food Pasta (Mario Batali Inspired)
Just saw a Mario Batali on Food Network. Make a dish called Spigola alla Livornese, the dish is simple. Here is my take on the style:
Pasta, any regular pasta will do, for those that are health conscious they can get ‘organic’ whole wheat pasta. Onion, garlic, wine, olives, parsley, zucchini, calamari, tomato and tomato paste goat cheese and EVOO (Extra Virgin Olive Oil)
Prepare the pasta like you would with any other pasta. Best way is to follow the instructions on the bag / box. Heat up the pan and add in a table spoon of EVOO, add in the 2 table spoon of onions and a tea spoon of garlic let is cook for a while until golden brown. Then add in the diced zucchini and let it cook for about 2 mins on high heat.
Then I added in wine, about a 1/2 a cup worth. Let it cook for a bit and then add in the tomato paste you can get this canned or use pasta sauce if you do not have any canned ones. Let this cook for about a minute and then add in the calamari and olives. Give the calamari about a minute and a half to cook. And towards the end add in the diced tomatoes and chopped parsley to finish.
Plate the pasta and drizzle a bit of EVVO on it. Place the mixture on top of the pasta and drizzle with a little goat cheese on top.
